The most important part of the chuckwagon is the word chuck, which since the early 17th century referred to a lesser quality cut and lower priced part of the beef carcass. A century later the word chuck would be used to mean good, honest, heart-warming food. On a typical ranch, a cowboy would eat chuck in the chuck house, so when you put the chuck house on wheels, it becomes a chuck wagon......
